Despite being the world’s most famous French producer of cognac for over 250 years, the Hennessy distillery was actually founded by Irish businessman Richard Hennessy in 1765. And the first Hennessy VSOP (very superior old pale) was commissioned by the future King George IV of England. Sacré bleu!

Salted Caramel Martini Serves two

Method Drizzle a little caramel sauce (1-2 tsp) around the edge of two chilled coupe glasses. Add the Baileys Salted Caramel Irish Cream (p93) , the vodka, the cream and the remainder of the caramel sauce to a cocktail shaker half filled with ice, and get jiggy with it (make sure the caramel sauce dissolves). Strain into the glasses and garnish with a little sea salt and the chocolate flakes.

Ingredients 100ml Baileys Salted Caramel Irish Cream

2-4 tbsp caramel sauce (to taste) 50ml vodka 100ml cream 2 handfuls of ice

Sea salt flakes, dark or milk chocolate flakes
